My third recipe with HelloFresh, and – once more – one I thought I didn’t need a recipe for, and was pleasantly surprised.
I know how to cook a sausage – even one wrapped in bacon. The surprise was the lentil stew that went with it. It’s not something I have done, and it was easy and delicious.
In brief:
- Wrap sausages in bacon and put into a high oven.
- Chop an onion, and fry on a low/medium heat for 5 mins until soft.
- Slice a courgette, add to the onion, and continue to fry for 3 mins.
- Add a clove of garlic (chopped or pressed), a heaped teaspoon of cumin, 50g of red lentils, a tin of tomatoes, and half as much water. Plus a stock cube. Bring to a simmer, and then cook for 20 mins until the lentils soften. Stir occasionally to ensure that the lentils don’t burn on the bottom of the pan.
- After 20 mins, add 100g peas, stir and cook for a further 5-6 minutes.
- Serve the sausages on a bed of lentil stew, and an optional garnish of chopped parsley.
That’s it – it really couldn’t be easier, and tasty as anything – I could have happily eaten the lentils without the sausages.
But having said that, the sausages – nice and fat, and lightly spiced – were pretty nice as well!
